This is our “Kisaragi Parfait” featuring turnip, cauliflower, and yuzu.
At the base, there’s a jelly made from yuzu and sparkling wine, topped with a mousse of turnip and cauliflower. The texture is enhanced by a concassé of ten different vegetables. On top, we have house-made turnip and cauliflower ice cream, garnished with quinoa.
