先日、Hitotsu が11年目を迎えました。

20代この店の厨房に立ったあの日からもうそんなに経ちました。娘2人もぐんぐん成長をし、私は毎日子育てと夫はお店と家事と追われておりますが、
それでも毎日幸せです。

4月から、新しい社員のひかちゃんが来てくれました。休憩中に二の腕体操をする2人がとても微笑ましく、いつまでもこんな雰囲気のお店でいたいなあと心から願います。

毎年、夫婦で写真を撮られると爆笑してしまいます。

お陰様で11周年を迎える事が出来ました。

ブラッスリーアムールとして戸塚の地で開業させて頂いてから
長い様であっという間の11周年

近年はコロナウイルスの蔓延により、営業時間の短縮、お酒が出せない時期があったりと非常に苦しい時期もありましたが、

沢山のお客様とスタッフ、家族やお取引先の方々に支えて頂きながらまた一年過ごす事が出来ました。本当にありがとうございます。

レストランで一番大切なのは愛情であるという思いは変らず、むしろより一層強く思うことが多くなりました。

デジタル化、人工知能やロボット化、もちろんこれらの技術を活用することは業界の発展には必要な事かと思われます。

しかし、Hitotsuの根源にあるのは愛情、お客様の気持ちを汲み取り、どうしたらより感動して頂けるのか、心を動かすことが出来るのか、人間らしい温かいサービス、人が人をおもてなしをするからこそ伝わる思い。そういった部分をこれからも大切にし、Hitotsuという私達のお店が沢山の方々に愛されるお店であるようにこれからも頑張って
参りたいと思います。

Thanks to you, we were able to celebrate our 11th anniversary.

Since I opened a business in Totsuka as a Brasserie Amur

It’s a long 11th anniversary in no time.

In recent years, due to the spread of coronavirus, there were very difficult times such as shortening business hours and not being able to serve alcohol,

I was able to spend another year with the support of many customers, staff, family members and business partners. Thank you so much.

The thought that the most important thing in a restaurant is love has not changed, but rather, I think more strongly.

Digitalization, artificial intelligence and robotization, of course, it seems that utilizing these technologies is necessary for the development of the industry.

However, the root of Hitotsu is love, how to understand the feelings of customers, how to be more impressed, whether you can move your heart, human-like warm service, and feelings that can be conveyed only because people treat people. . We will continue to cherish such parts, and continue to do our best so that our shop called Hitotsu is loved by many people.

I would like to visit.
